Mixed Fish Chowder, with Multiseed Toasts

Mixed Fish Chowder, with Multiseed Toasts

Ingredients:

  • 600g mixed fish (Cod, Smoked Haddock, Salmon etc.)
  • 2 Carrots
  • 1 Small onion
  • 3 Potatoes
  • 50g Butter
  • 1 Tbsp Vegetable oil
  • 600mls Fish stock (Marigold Vegan)
  • 200mls Milk
  • Bouquet Garni (Parsley, Thyme, Bay leaf)
  • 2 Tbsp Brandy
  • Seasoning
  • Cream to serve

Directions

  1. Cut fish into cubes
  2. Chop carrots, onion, potatoes in same size cubes.
  3. Sauté vegetable mixture in butter and oil until softened.
  4. Add in fish. Cook for 3 minutes. Add Bouquet Garni.
  5. Add stock, milk and brandy. Bring to the boil.
  6. Simmer for 15 minutes.
  7. Remove Bouquet Garni.
  8. Serve in warm bowl.
  9. Garnish with cream and chopped parsley.
  10. Serve on Multiseed Toasts.
