Gluten & Dairy Free Pancakes

Ingredients:

  • 150g Gluten free self-raising flour
  • Tsp of baking powder
  • 2 Eggs
  • 200g dairy free yogurt
  • 100ml oat milk
  • Dash of vanilla extract

Directions

Mix the flour and baking powder. In a separate bowl, whisk the eggs, yogurt, vanilla extract and milk together. 

Next, add the flour and baking powder and whisk together. You want it to be smooth and bubbly. It’s best to leave the mix to sit, I left it for 30 mins - this allows the mixture to get really bubbly and the more bubbles we have, the more spongey our pancakes will be.

This batter will make 15 small pancakes like in the image here, feeding 3 adults happily.

I just pour the mixture onto a hot pan, let fry each side until a golden colour and done.

Serve with the toppings of your choice and enjoy!
